Cashew Pulav / Pulao

Pulao / pulav is a delicious rice recipe. Here i have a pulao recipe with the flavor of cashew. Cashews are lovely dry-fruit  favorite for everyone. Thus the cashew flavor bring a extra delicious and variant taste to the pulao. Rice is cooked along with cashew paste. It is a simple recipe with great taste, give a try on it.

Cashew Pulav / Pulao

INGREDIENTS FOR PREPARATION

  1. Basmati rice: 1 cup
  2. Cashew: 150 g
  3. White kuskus: 2 tbs
  4. Onion: 1 large
  5. Grated coconut: 2 tbs
  6. Cloves: 4
  7. Cinnamon: 2 inch
  8. Cardamom: 4
  9. Ghee: 50 g
  10. Salt: to taste
METHOD OF PREPARATION

  • Soak half of the cashew in water for 15-30 minutes.
  • Wash and soak rice for half an hour.
  • Now grind soaked cashew along with white kuskus and grated coconut to a fine paste.
  • Now melt ghee in a sauce pan, roast remaining cashew pieces.
  • Take out the cashew pieces and saute cloves, cardamom, and cinnamon in same ghee.
  • Now add sliced onion and saute till it soften.
  • Add ground paste to it and saute for 2 minutes.
  • Now add 2 cups of water and salt to it.
  • Stir well and allow it to boil.
  • When water starts boiling, add drained rice to it, stir well and cook with closed lid in low flame.
  • When rice is about to get cooked, add half of roasted cashew pieces, mix well.
  • Turn off the flame while rice cooks and drain off  water.
Yummy Cashew Pulao is ready, serve hot by garnishing with reserved roasted cashew
