Jilebi/ jalebi is a sweet crispy snack prepared with urad dal. We can also prepare it with all purpose flour but this recipe is healthier than that as we use urad dal for the preparation. It is a fried snack with a filling of sugar syrup. It is delicious and can be prepared easily with few ingredients.
INGREDIENTS FOR PREPARATION
- Urad dal(skinless): 1 cup
- Sugar: 2 cup
- Water: 1&1/4 cup
- Rose water: 1 tbs.
- Cardamom: 1-2
- Yellow food color: 2-3 drops
- Oil: To fry
- Soak urad dal for 1 hour.
- Grind soaked urad dal without adding more water to get a thick batter.
- Mix food color with it.
- Take a little thick cloth and make a button hole in it.
- Heat a wide mouthed pan and heat oil in it.
- Pour little batter to the middle of cloth and pour it to the oil through the button hole in round shape to get jilebi shape.
- Cook both sides till it become crispy.
- Oil should not be too hot. it should be in medium hot.
- Take out the jilebis from oil and immediately transfer to the prepared hot sugar syrup.
- Keep it there for 10 minutes and transfer to a plate after that.
- Take the jilebi from oil and put to syrup directly. if we loose little time for removing excess oil , we will not get perfect jilebi. So no need of removing excess oil.
- Melt 2 cup of sugar in 1&1/4 cup water , It should not be thread consistency.
- Also add 1 drop of food color to it.Add rose water and mix well.
- Sugar syrup should be in low flame till all jilebi are prepared. Add little water in intervals to avoid thickening.
