Peanut Chikki Recipe



Peanut chikki is a crispy snack prepared with peanut and jaggery which can be considered under chocolate category. Peanut has many nutritional benefits. they are rich in biotin copper and many other vitamins and minerals. Jaggery also have many health benefits. It has the ability to cleanse our body, act as a digestive agent and are good source of many minerals. A snack prepared with those will be more healthy and have a high nutritional value. We can replace chocolate with this for our kids. both children and adult enjoys its taste.
INGREDIENTS FOR PREPARATION

  1. Peanut: 1 cup
  2. Powdered jaggery: 3/4 cup
  3. Water: 2 tbs
  4. Cardamom powder: 1/2 tsp
  5. Ghee or butter: for greasing
METHOD OF PREPARATION

  • Grease a tray and keep aside. 
  • If you are using raw peanuts with skin, roast it and remove its skin by rubbing in between cloth.
  • Crush it into 2-4 pieces using pestle and mortar.
  • If you have jaggery blocks, grate or powder it .
  • In a non stick pan, boil 2 tbs of water.
  • Now add 3/4 cup of jaggery and cook till jaggery melts and become thick to 1 string consistency.
  • You can check the consistency by taking little jaggery between two fingers and just open it, if you get a string then it is ready. 
  • Note: take care as it is very hot.
  • When jaggery thickens, add cardamom powder, mix well and add peanut pieces.
  • Stir well to get mixed , turn off the flame and immediately pour into the greased tray.
  • Mark lines or borders for chikki square pieces immediately, as it cools you cannot do that.
  • Allow it to cool.
  • After cooling, separate the square pieces and store in air-tight container.
Yummy crispy sweet peanut chikki is ready. Enjoy its taste.
