Now its jack-fruit season and we have lots of variety recipes with it. Here i introduce a simple healthy teatime snack with jack-fruit that anyone can prepare easily and are soft and tasty too. Its Steamed Jack-fruit cake or kinnathappam.
INGREDIENTS FOR PREPARATION- Jack-fruit: 15-20 big cloves(ripened)
- White rice: 1 cup
- Coconut grated: 1/2 cup
- Sugar/ Jaggery : as needed( depends on jack-fruits sweetness)
- Cardamom: 2
- Baking soda: 1/2 tsp
- Salt: 1/4 tsp
- Ghee: 2 tbs
- Cashew, raisins or coconut pieces: to garnish
- Soak rice for 3-4 hours.
- Steam cook jack-fruit pieces for 6-8 minutes.
- Roast cashew and raisins or coconut pieces or combination of all in ghee and keep ready.
- Add soaked rice, cooked jack-fruit pieces, grated coconut, cardamom , baking soda, and salt in a mixer grinder or wet grinder along with some water and grind to smooth paste.
- Now add jaggery or sugar to your sweetness.
- The batter should be of idli batter consistency.
- Grease a pan with little ghee and pour the batter into it.
- Top it with roasted cashew, raisins or coconut pieces and steam cook it for 20-30 minutes or till its done.
- Allow it to cool a little, demould , slice and serve hot.
Yummy , soft and tasty Steamed Jack-fruit Cake or Kinnathappam is ready. Serve hot with a cup of tea.
