Steamed Jack-fruit Cake/Kinnathappam

Now its jack-fruit season and we have lots of variety recipes with it. Here i introduce a simple healthy teatime snack with jack-fruit that anyone can prepare easily  and are soft and tasty too. Its Steamed Jack-fruit cake or kinnathappam.


INGREDIENTS FOR PREPARATION
  1. Jack-fruit: 15-20 big cloves(ripened)
  2. White rice: 1 cup
  3. Coconut grated: 1/2 cup
  4. Sugar/ Jaggery : as needed( depends on jack-fruits sweetness)
  5. Cardamom: 2
  6. Baking soda: 1/2 tsp
  7. Salt: 1/4 tsp
  8. Ghee: 2 tbs
  9. Cashew, raisins or coconut pieces: to garnish
METHOD OF PREPARATION
  • Soak rice for 3-4 hours.
  • Steam cook jack-fruit pieces for 6-8 minutes.
  • Roast cashew and raisins or coconut pieces or combination of all in ghee and keep ready.
  • Add soaked rice, cooked jack-fruit pieces, grated coconut, cardamom , baking soda, and salt in a mixer grinder or wet grinder along with some water and grind to smooth paste.
  • Now add jaggery or sugar to your sweetness.
  • The batter should be of idli batter consistency.
  • Grease a pan with little ghee and pour the batter into it.
  • Top it with roasted cashew, raisins or coconut pieces and steam cook it for 20-30 minutes or till its done.
  • Allow it to cool a little, demould , slice and serve hot.
Yummy , soft and tasty Steamed Jack-fruit Cake or Kinnathappam is ready. Serve hot with a cup of tea.
