Mutton biriyani is the most lovable recipes among biriyani. Here comes a delicious lovely and easy recipe for Mutton biriyani. In this recipe, we cook rice in mutton masala while keeping the biriyani for dhum process. It enriches the taste of rice and we will get single rices without sticking. It is really tasty, give a try on it.
INGREDIENTS FOR PREPARATION
- Mutton: 1 kg
- Biriyani Rice: 3/4 kg
- Onion(thinly sliced): 1 cup
- Garlic paste: 1/2 tbs
- Ginger paste: 1/2 tbs
- Cinnamon, cloves, cumin powder: 1 tbs
- Chilly powder: 1 tbs
- Coriander powder: 1/2 tbs
- Turmeric powder: 1/2 tbs
- Kasuri methi: a pinch
- Fennel powder: a pinch
- Yogurt: 1/2 cup
- Milk: 1 cup
- Ghee: 125 ml
- Oil: 100 ml
- Yellow food color or saffron: a pinch
- Salt: to taste.
- Wash and drain mutton pieces.
- Mix ginger-garlic paste, masala powder, kasuri methi, cumin powder, fennel powder, chilly powder, coriander powder, turmeric powder and salt.
- Marinate mutton pieces in above mixture for 1 hour.
- Cook marinated pieces in cooker till it cooks 3/4th or completely.
- Fry 1/4th of onion in hot oil.
- Take a thick bottomed pan with lid, add cooked mutton with its gravy, remaining onion, curd, milk , little salt and mix well.
- Boil 3 cups of water with salt in a pan and cook rice just for 1 minute in it.
- Drain the water and layer it over mutton mix.
- Mix saffron or color with little water and pour over rice.
- Also pour ghee all over it.
- Now close the lid of pan tightly, in such a way that i cannot release steam.
- Cook it for 20 minutes in low flame.
- Remove from flame and keep unopened for 5-10 minutes.
- After 10 minutes, open and mix.
